Ingredients
Main Ingredients
- 2 large boneless, skinless chicken breasts (about 1 lb)
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 4 large flour tortillas (10-inch size)
- 1 cup cooked black beans (rinsed & drained)
- 1 cup fresh corn kernels (or frozen, thawed)
- 1 medium red bell pepper, thinly sliced
- 1 cup shredded cheddar or pepper jack cheese
- 1/2 cup shredded lettuce (romaine or iceberg)
- 1/4 cup chopped fresh cilantro
Optional Toppings
- 1/4 cup sour cream or Greek yogurt
- 1 avocado, sliced
- Fresh lime wedges
- Chipotle mayo or your favorite Southwest sauce
Instructions
- Prep and Season Chicken: Pat the chicken breasts dry. In a small bowl, combine chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Rub this seasoning evenly over the chicken.
- Cook Chicken: Heat olive oil in a skillet over medium heat. Add chicken breasts and cook for 6-7 minutes per side or until internal temperature reaches 165°F. Remove from heat and let rest 5 minutes, then slice thinly.
- Warm Tortillas & Prepare Veggies: Warm tortillas in a dry skillet or microwave for 20 seconds to make them pliable. Rinse and drain black beans, slice red pepper, shred lettuce, and chop cilantro.
- Assemble Wraps: Lay a tortilla flat. Spread a spoonful of chipotle mayo or sour cream (if using). Layer with sliced chicken, black beans, corn, red pepper, cheese, lettuce, and cilantro. Add avocado slices if desired.
- Roll and Serve: Fold in the sides of the tortilla and roll tightly from one end to the other. Cut in half on a diagonal for serving. Serve immediately with lime wedges on the side for extra zest.
