Blackberry Almond Baked Oatmeal with Crunchy Streusel Topping

Ingredients
- 2 cups rolled oats
- 1 3/4 cups unsweetened almond milk
- 1/3 cup smooth almond butter
- 1/4 cup maple syrup
- 1 cup fresh blackberries
- 1/4 cup sliced almonds
- 1 tbsp chia seeds
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- Pinch of sea salt
Instructions
- Preheat oven to 375°F and grease an 8x8 baking dish.
- Mix oats, chia seeds, cinnamon and salt in a large bowl.
- Whisk together almond milk, almond butter, maple syrup and vanilla in separate bowl.
- Combine wet and dry ingredients, then fold in blackberries gently.
- Pour mixture into prepared baking dish.
- Sprinkle sliced almonds evenly over top, pressing lightly into batter.
- Bake 25-30 minutes until golden and set at edges.
- Cool 5 minutes before serving warm.
- Optional: Drizzle with extra almond butter or maple syrup.
Chef's Note
For extra crunch, toast the sliced almonds before baking. Frozen blackberries work perfectly when fresh aren't in season!
