Ingredients
- 4 small whole wheat flatbreads
- 1 cup crumbled feta cheese
- 2 tbsp za'atar spice blend
- 3 tbsp extra virgin olive oil
- 2 tbsp honey (plus extra for drizzling)
- ¼ cup pine nuts, lightly toasted
- ¼ cup fresh mint leaves
- Pinch of flaky sea salt
Instructions
- Preheat oven to 375°F (190°C).
- Toast pine nuts in dry skillet over medium heat until golden (2-3 minutes). Set aside.
- Mix feta, za'atar, and 1 tbsp olive oil in small bowl.
- Brush flatbreads with remaining olive oil and warm in oven for 3 minutes.
- Spread feta mixture evenly over flatbreads, leaving ½-inch border.
- Bake for 8-10 minutes until edges are crisp and cheese softens.
- Remove from oven and immediately drizzle with honey.
- Top with toasted pine nuts, mint leaves, and flaky salt.
- Cut each flatbread into quarters and serve warm.
