Honey Chipotle Turkey Meatball Skillet with Cilantro Lime Rice

Ingredients
- 1 lb ground turkey
- 1/3 cup panko breadcrumbs
- 1 large egg
- 3 garlic cloves (minced)
- 1/4 cup fresh cilantro (chopped)
- 2 chipotle peppers in adobo (minced)
- 1/3 cup honey
- 2 tbsp lime juice
- 1 tbsp olive oil
- 1/2 cup chicken broth
- 1 cup uncooked white rice
- 1 lime (zested)
Instructions
- In a bowl, mix turkey, panko, egg, half the garlic, and half the cilantro.
- Form into 1.5-inch meatballs (about 18 total).
- Heat oil in large skillet over medium heat. Brown meatballs 2-3 minutes per side.
- Remove meatballs; add remaining garlic and chipotles to skillet. Cook 1 minute.
- Stir in honey, lime juice, and broth. Simmer 2 minutes until slightly thickened.
- Return meatballs to skillet, coating in sauce. Simmer 8-10 minutes until cooked through.
- Meanwhile, cook rice according to package instructions. Stir in lime zest and remaining cilantro.
- Serve meatballs and sauce over cilantro lime rice. Garnish with extra cilantro if desired.
Chef's Note
For extra smokiness, add 1/2 tsp smoked paprika to the meatball mixture. Adjust spice level by using more or less chipotle peppers.

Substitutions
