Ingredients
- 3 large ripe avocados
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 2 eggs
- 1/4 cup flour
- 6 slices cooked bacon, crumbled
- 1/2 cup shredded Monterey Jack
- 1/4 cup sour cream
- 2 tbsp mayonnaise
- 1 lime (juiced)
- 1/2 tsp chipotle powder
Instructions
- Preheat oven to 425°F and line baking sheet with parchment.
- Cut avocados into 1/2-inch wedges, pat dry with paper towels.
- Set up dredging stations: flour in first bowl, beaten eggs in second, and panko mixed with Parmesan and spices in third.
- Dip avocado wedges in flour, then egg, then panko mixture, pressing to adhere.
- Arrange in single layer on baking sheet. Bake 12-15 minutes until golden.
- While baking, mix sour cream, mayo, lime juice, and chipotle powder for crema.
- Remove fries from oven, top with cheese and bacon. Return for 2 mins to melt cheese.
