Ingredients

  • 4 large carrots (peeled and chopped)
  • 2 tbsp olive oil (divided)
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • 1/3 cup tahini
  • 2 tbsp lemon juice
  • 1 garlic clove
  • 2 whole wheat pitas
  • 2 tbsp za'atar seasoning
  • Salt to taste

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Toss carrots with 1 tbsp oil, cumin, paprika, and cayenne. Roast 20 mins until tender.
  3. While carrots roast, cut pitas into wedges and brush with remaining oil. Sprinkle with za'atar and bake 8-10 mins until crisp.
  4. Blend roasted carrots, tahini, lemon juice, garlic, and 3 tbsp water in food processor until smooth.
  5. Season with salt to taste, adding more water if needed for desired consistency.
  6. Spoon carrot mixture into serving bowl.
  7. Drizzle tahini over top and use a knife to create swirl patterns.
  8. Serve warm or chilled with za'atar pita chips.
Chef's Note
For extra smoky flavor, char the carrots slightly under the broiler before blending.
