Spiced Carrot & Tahini Swirl Dip with Za'atar Pita Chips
This Middle Eastern-inspired dip combines sweet roasted carrots with earthy tahini and warm spices for a showstopping swirl effect. Paired with homemade za'atar-dusted pita chips, it's the perfect balance of savory, salty, and slightly sweet. Great for parties or snacking!
Ingredients
- 4 large carrots (peeled and chopped)
- 2 tbsp olive oil (divided)
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper
- 1/3 cup tahini
- 2 tbsp lemon juice
- 1 garlic clove
- 2 whole wheat pitas
- 2 tbsp za'atar seasoning
- Salt to taste
Instructions
- Preheat oven to 425°F (220°C).
- Toss carrots with 1 tbsp oil, cumin, paprika, and cayenne. Roast 20 mins until tender.
- While carrots roast, cut pitas into wedges and brush with remaining oil. Sprinkle with za'atar and bake 8-10 mins until crisp.
- Blend roasted carrots, tahini, lemon juice, garlic, and 3 tbsp water in food processor until smooth.
- Season with salt to taste, adding more water if needed for desired consistency.
- Spoon carrot mixture into serving bowl.
- Drizzle tahini over top and use a knife to create swirl patterns.
- Serve warm or chilled with za'atar pita chips.
Chef's Note
For extra smoky flavor, char the carrots slightly under the broiler before blending.
